Great for the plethora of tomatoes from your garden! I usually just throw in whatever of the following ingredients I have on hand:
2-3 large tomatoes, peeled and diced
2 peaches, peeled, pitted and diced
1 bell pepper or spicy pepper diced
1/4 red onion, finely diced
1-2 cloves of garlic, minced (a sprinkle of garlic powder will work as well)
1/2 bunch cilantro, chopped
juice from 1 lime (or lemon)
dash of salt
(adding leftover sweet corn can be nice as well!)
Combine all ingredients and enjoy with some tortilla chips!
Absolutely delicious with some baked salmon or shrimp seasoned with equal parts of paprika, cumin, onion powder, salt and chili powder.
I have made these twice already this peach season because it is easy, beautiful and delicious! They don’t even last long enough for a photo… I use fresh peaches from the orchard, not frozen.
I haven’t tried these yet, but they look amazing!
