Peach Salsa
Great for the plethora of tomatoes from your garden! I usually just throw in whatever of the following ingredients I have on hand:
2-3 large tomatoes, peeled and diced
2 peaches, peeled, pitted and diced
1 bell pepper or spicy pepper diced
1/4 red onion, finely diced
1-2 cloves of garlic, minced (a sprinkle of garlic powder will work as well)
1/2 bunch cilantro, chopped
juice from 1 lime (or lemon)
dash of salt
(adding leftover sweet corn can be nice as well!)
Combine all ingredients and enjoy with some tortilla chips!
*** This also works very well with a few more peaches and no tomatoes.***

Peach Guacamole
Absolutely delicious with some baked salmon or shrimp seasoned with equal parts of paprika, cumin, onion powder, salt and chili powder. To make the peach guacamole, I add 1 or 2 diced peaches to the recipe below:

Peach Pastry
I have made these twice already this peach season because it is easy, beautiful and delicious! They don’t even last long enough for a photo… I use fresh peaches from the orchard, not frozen.
